Easy Berry Pie
A no bake wonder to tempt the taste buds.


Serves 6 - 8

2 tbsp (25 ml) gelatin
½ cup (125 ml) sugar
3 cups (750 ml) unsweetened fruit juice (strawberry, raspberry or others)
4 cups (1 L) partially thawed strawberries or raspberries
1 Nine inch (22.5 cm) baked pie shell or tart shells
2 tbsp (25 ml) crème de menthe
whipped cream or topping

Soften gelatin in a little unsweetened juice, add ½ juice and sugar, heat to dissolve gelatin, remove from heat

Add remaining juice.

Place in refrigerator to chill until the consistency of raw egg whites; stir occasionally.

Fold in partially thawed berries and crème de menthe, spoon into pie shell (or tart shells); refrigerate to set

Serve with whipped cream or whipped topping
